Cooking courses are popular the world over, and there are a lot of choice out there, from general public courses, tailored courses, or individual courses at the chef's home.
Many people find it useful to combine it with a morning tour of a local market, that way you understand and become more confident with the ingredients that you use - especially when sourcing it from home.
I think you can categorise the establishments in three ways, dedicated cookery schools, Hotels and restaurants with spin-off cookery classes and individual cookery teachers providing individual tailored tution.

Cooking schools
The Blue elephant This is a famous restaurant and has a popular cooking class attached to it. Classes also involve visiting the local market. This is very close to TheRiverSideBangkok, near Surasak BTS
Baipai cooking school This is a dedicated school and situated in a residential area, about a mile or two away - not far from the Tawandaeng German brewery (a good night out)

May Kaidee runs a Thai vegatarian cooking class, this is situated near the Khasan Road area
Angsana runs ThaiHomeCooking private cooking classes in her kitchen (Sukhumvit) , you select the menu and she offers a market trip, I have tasted the results - "aroy maak maak"
Finally a-littlesomething cooking for kids and family - Sukhumvit.

Take a look at some of the Bangkok cooking schools listed, checkout the google map on the left for a geographical take on their locations. Most schools will offer a pick-up service.
Thai food is about cooking with gas, quickly with a high flame, it can be hot in that kitchen - more of an outside environment is favourable

green, red and yellow curries.
Bangkok is chocka full of restaurants and also very cosmopolitan, but the best eating I have had comes form street food and street restaurants (for example, sticky rice with your dinner is not something you get generally in most restaurants), my wife is Thai which makes it much easier to order, on my own is a different story!

The Amita Thai cooking school, provides an airy environment for a great cooking tution experience. Situated by the Yai Klong (canal) off the Choaphraya. You are picked up from your hotel and taken to the Maharaj Pier where you go by boat to the school - an adventure before you start!

The school has its own herb and spice garden where you can learn and see growing many of the ingredients that you will use.
Class starts at 9:30 and ends 1:30pm, cumulating in lunch of the four dishes that you have prepared.
